Tahini

Tahini is a Middle Eastern condiment made from toasted ground sesame. While it can be served by itself, it’s most often used in making hummus or baba ghanoush. This thick sesame paste is not hard to make and will last for up to a month in the fridge.

Ingredients

  • 1 cup Sesame seeds
  • 2 TBL Olive or Grape seed oil
  • Salt to taste

Process

  1. Mise en Place: Measure and prepare your ingredients prior to starting.
  2. Toast sesame seeds for nuttier flavor by putting a dry skillet on the Med heat.
  3. Stir the seeds frequently with a wood spoon
  4. Toast until light tan (not brown), which will take ~5 mins depending on temp.
  5. Place seeds in a food processor and grind until a crumbly paste forms.
  6. Add oil – use more if you want a thinner less viscous paste
  7. Add salt to taste.

Store in a tight container in fridge up to one month.
