Slow Roast Whole Chicken

I don’t usually cook whole chickens, but depending on the event or the plating I’m going for, it can be a nice change. This is a simple country chicken recipe that doesn’t get too wild with the ingredients.

Ingredients

  • 1 Whole Chicken – 4-5 lbs
  • 2 Carrots – whole
  • 2 Garlic cloves – minced
  • 1 Onion – Quartered
  • 2 TBL Olive oil
  • 2 tsp Black Pepper
  • 1 tsp Kosher salt
  • 0.5 tsp Oregano
  • 0.5 tsp Sage
  • 0.5 tsp Chili powder

Process

  1. Mise en Place: Measure and prepare your ingredients prior to starting.
  2. Place carrots and onions in slow cooker.
  3. Mix garlic with olive oil.
  4. Mix the dry spices.
  5. Tuck chicken wings and tie drumsticks.
  6. Use fingers to loosen the skin from the breast.
  7. Rub garlic oil under the skin and use tooth picks to re-secure skin.
  8. Brush outside skin of chicken with oil mix.
  9. Sprinkle skin with spices and put in the cooker breast side up.
  10. Cook covered for 4-5 hours on High, until thigh meat next to bone is 160 F.
  11. Remove chicken and tent with foil.
  12. Discard vegetables and let chicken rest 10 mins before serving.
