I don’t usually cook whole chickens, but depending on the event or the plating I’m going for, it can be a nice change. This is a simple country chicken recipe that doesn’t get too wild with the ingredients.
Ingredients
- 1 Whole Chicken – 4-5 lbs
- 2 Carrots – whole
- 2 Garlic cloves – minced
- 1 Onion – Quartered
- 2 TBL Olive oil
- 2 tsp Black Pepper
- 1 tsp Kosher salt
- 0.5 tsp Oregano
- 0.5 tsp Sage
- 0.5 tsp Chili powder
Process
- Mise en Place: Measure and prepare your ingredients prior to starting.
- Place carrots and onions in slow cooker.
- Mix garlic with olive oil.
- Mix the dry spices.
- Tuck chicken wings and tie drumsticks.
- Use fingers to loosen the skin from the breast.
- Rub garlic oil under the skin and use tooth picks to re-secure skin.
- Brush outside skin of chicken with oil mix.
- Sprinkle skin with spices and put in the cooker breast side up.
- Cook covered for 4-5 hours on High, until thigh meat next to bone is 160 F.
- Remove chicken and tent with foil.
- Discard vegetables and let chicken rest 10 mins before serving.
