While potato leak soup is my favorite, you have to mix it up from time to time to keep you pallet guessing. This is an all day soup, that I enjoy making, but I warn you, it’s pretty rich.
Ingredients
- 5 lbs Potatoes – peeled and cubed
- 72 oz Chicken broth
- 16 oz Cream cheese – cubed
- 8 oz half & half cream
- 2 oz Butter
- 1 Onion – diced
- 1 Garlic clove – minced
- 1.5 tsp Kosher salt and to taste
- 0.25 tsp Black pepper and to taste
- Toppings
- 1 lb Bacon – cooked and crumbled
- 3/4 cup Sharp Cheddar – grated
- 1/4 cup Chives – minced – 1 TBL dried
Process
- Mise en Place: Measure and prepare your ingredients prior to starting.
- Put potatoes and onion in slow cooker on High.
- Add broth, garlic, salt and pepper.
- Cook covered for 8-10 hours.
- Mach or puree the potatoes.
- Stir in cream cheese, cream, and butter.
- Cook 15 mins or until hot again.
- Whisk to smooth out.
- Serve with toppings.
