Slow Cooked Potato Soup

While potato leak soup is my favorite, you have to mix it up from time to time to keep you pallet guessing. This is an all day soup, that I enjoy making, but I warn you, it’s pretty rich.

Ingredients

  • 5 lbs Potatoes – peeled and cubed
  • 72 oz Chicken broth
  • 16 oz Cream cheese – cubed
  • 8 oz half & half cream
  • 2 oz Butter
  • 1 Onion – diced
  • 1 Garlic clove – minced
  • 1.5 tsp Kosher salt and to taste
  • 0.25 tsp Black pepper and to taste
  • Toppings
    • 1 lb Bacon – cooked and crumbled
    • 3/4 cup Sharp Cheddar – grated
    • 1/4 cup Chives – minced – 1 TBL dried

Process

  1. Mise en Place: Measure and prepare your ingredients prior to starting.
  2. Put potatoes and onion in slow cooker on High.
  3. Add broth, garlic, salt and pepper.
  4. Cook covered for 8-10 hours.
  5. Mach or puree the potatoes.
  6. Stir in cream cheese, cream, and butter.
  7. Cook 15 mins or until hot again.
  8. Whisk to smooth out.
  9. Serve with toppings.
