Slow Cooked Herb Chicken

This is a nicely balanced herbal chicken made in a slow cooker. It takes over five hours to prepare but if you have the time its a nice option for something different.

Ingredients

  • 4 Bone-in chicken breast halves, or, 8 bone-in thighs with the skin removed
  • 4 oz Chicken broth
  • I TBL Olive oil
  • 1 tsp Paprika
  • 0.5 tsp Garlic powder
  • 0.5 tsp Season salt
  • 0.5 tsp dried Thyme
  • 0.5 tsp dried Basil
  • 0.5 tsp Black Pepper

Process

  1. Mise en Place: Measure and prepare the ingredients prior to starting.
  2. Pat dry the chicken pieces and brush with olive oil.
  3. Mix all the spices together and rub onto the chicken
  4. Place pieces in slow cooker, add broth and cook 4-5 hrs until meat is 160 F near bone.

Note: This usually turns out better using Sous Vide if you have one.
