Sauteed Brussels Sprouts with Bacon

This Keto friendly dish serves well with steak or seafood, or as a starter. I sometimes make this and let it cool to later use in salads. This is Keto friendly because you saute the Brussels sprouts in bacon grease not only making a very flavorful dish, but one full of fat.

Ingredients

  • 1.25 lb Brussels sprouts ~ 4 cups
  • 8 oz Bacon – sliced
  • Kosher salt and Pepper to taste

Process

  1. Clean Brussels sprouts and trim ends.
  2. Slice bacon into strips (lardons).
  3. Blanch Brussels sprouts
    1. Bring large pot of water to boil. Add Kosher salt.
    2. Blanch Brussels sprouts ~3 mins and drain.
    3. When cooled, slice each sprout in half along core.
  4. Cook Bacon
    1. Heat large heavy bottom skillet on Med-High.
    2. Add bacon and saute until fat is rendered out and bacon is slightly crisp.
  5. Add the Brussels sprouts to the bacon with cut side down and cook without stirring until lightly browned ~3 mins. Stir and continue cooking until other side of spouts are browned ~2 mins.
  6. Remove bacon and Brussels sprouts from pan and discard grease (or save for frying eggs tomorrow).
  7. Salt and pepper to taste
