This Keto friendly dish serves well with steak or seafood, or as a starter. I sometimes make this and let it cool to later use in salads. This is Keto friendly because you saute the Brussels sprouts in bacon grease not only making a very flavorful dish, but one full of fat.
Ingredients
- 1.25 lb Brussels sprouts ~ 4 cups
- 8 oz Bacon – sliced
- Kosher salt and Pepper to taste
Process
- Clean Brussels sprouts and trim ends.
- Slice bacon into strips (lardons).
- Blanch Brussels sprouts
- Bring large pot of water to boil. Add Kosher salt.
- Blanch Brussels sprouts ~3 mins and drain.
- When cooled, slice each sprout in half along core.
- Cook Bacon
- Heat large heavy bottom skillet on Med-High.
- Add bacon and saute until fat is rendered out and bacon is slightly crisp.
- Add the Brussels sprouts to the bacon with cut side down and cook without stirring until lightly browned ~3 mins. Stir and continue cooking until other side of spouts are browned ~2 mins.
- Remove bacon and Brussels sprouts from pan and discard grease (or save for frying eggs tomorrow).
- Salt and pepper to taste
