Pretzel Sticks

As weird as it may seem, pretzels are made like bagels with a hard crust and yeast. Making pretzels is a process driven recipe that requires patience and thoroughness.

Ingredients

  • 540 g Flour (4.5 cups)
  • 113 g Butter – melted
  • 35 g Kosher salt
  • 30 g Brown sugar
  • 7 g dry Active Yeast
  • 12 oz Water – warm
  • 170 g Baking Soda
  • 1 egg

Process

  1. Mise en Place: Measure and prepare your ingredients before starting.
  2. Combine water, sugar, yeast and butter. Pitch for 10 mins.
  3. Add flour to mix with salt.
  4. Mix in stand on mixer speed 1 for four mins.
  5. Knead at speed 4 for four mins.
  6. Place in greased bowl and proof for 1 hr.
  7. Bring a pot of water to a boil.
  8. Cut dough into 85g pieces and shape. Let rest 15 mins.
  9. Add baking soda to boiling water.
  10. In turn, boil pretzels for 30 s, flip then 30 s more.
  11. Place on greased or papered sheet. Let dry 20 mins.
  12. Flip and coat with egg wash.
  13. Preheat oven to 350 F.
  14. Cut in slits and sprinkle with salt.
  15. Bake 10 -15 mins, rotating halfway through.
