As weird as it may seem, pretzels are made like bagels with a hard crust and yeast. Making pretzels is a process driven recipe that requires patience and thoroughness.
Ingredients
- 540 g Flour (4.5 cups)
- 113 g Butter – melted
- 35 g Kosher salt
- 30 g Brown sugar
- 7 g dry Active Yeast
- 12 oz Water – warm
- 170 g Baking Soda
- 1 egg
Process
- Mise en Place: Measure and prepare your ingredients before starting.
- Combine water, sugar, yeast and butter. Pitch for 10 mins.
- Add flour to mix with salt.
- Mix in stand on mixer speed 1 for four mins.
- Knead at speed 4 for four mins.
- Place in greased bowl and proof for 1 hr.
- Bring a pot of water to a boil.
- Cut dough into 85g pieces and shape. Let rest 15 mins.
- Add baking soda to boiling water.
- In turn, boil pretzels for 30 s, flip then 30 s more.
- Place on greased or papered sheet. Let dry 20 mins.
- Flip and coat with egg wash.
- Preheat oven to 350 F.
- Cut in slits and sprinkle with salt.
- Bake 10 -15 mins, rotating halfway through.
