Marzipan Log

If you watch the Great British Baking show, you know that many deserts call for marzipan. While you can buy this moist almond dough pre-made at the store, why bring unnecessary chemicals and industrial crap into your desserts? Making fresh marzipan is quick and simple – and much cheaper than buying the industrial version.

Ingredients

  • 400 g Almond flour (14 oz)
  • 150 g Caster sugar (5.5 oz) can substitute granulated sugar
  • 250 g Confectionery sugar (9 oz) – powdered sugar
  • 2 Eggs – beaten
  • 1 tsp Almond extract

Process

  1. Mise en Place: Measure and prepare your ingredients prior to starting.
  2. Mix flour, sugars in stand mixer with dough hook on speed #1.
  3. Mix eggs and almond extract and beat.
  4. Pour egg mix into flour mix.
  5. Increase speed (no more than #4) to knead.
  6. Shape into a log, wrap in film, and refrigerate at least one hour.
  7. When ready, use the marzipan in your baking recipe as called for.
