If you watch the Great British Baking show, you know that many deserts call for marzipan. While you can buy this moist almond dough pre-made at the store, why bring unnecessary chemicals and industrial crap into your desserts? Making fresh marzipan is quick and simple – and much cheaper than buying the industrial version.
Ingredients
- 400 g Almond flour (14 oz)
- 150 g Caster sugar (5.5 oz) can substitute granulated sugar
- 250 g Confectionery sugar (9 oz) – powdered sugar
- 2 Eggs – beaten
- 1 tsp Almond extract
Process
- Mise en Place: Measure and prepare your ingredients prior to starting.
- Mix flour, sugars in stand mixer with dough hook on speed #1.
- Mix eggs and almond extract and beat.
- Pour egg mix into flour mix.
- Increase speed (no more than #4) to knead.
- Shape into a log, wrap in film, and refrigerate at least one hour.
- When ready, use the marzipan in your baking recipe as called for.
