Lime Cilantro Rice

This is a great rice to serve with many Latin and Korean dishes. It not only looks and smell wonderful, but tastes even better. This recipe is for stove top rice, which is of course the only real way to make flavorful rice. Save your rice cooker for the bland rice you use when all the flavor comes from the entree, like in Chinese cuisine.

Ingredients

  • 1.5 cups Rice – long grain, like Basmati or Jasmine
  • 2 TBL Olive oil
  • 18 oz Water
  • 1 Garlic clove – minced
  • 1 Lime – both zest and juice
  • 1 cup Cilantro – lightly packed, few stems
  • 1 tsp salt

Process

  1. Mise en Place – measure and prepare your ingredients prior to starting.
  2. Heat a sauce pan on med/high.
  3. Add oil and let warm.
  4. Add rice and coat in oil. Cook until rice starts to toast.
  5. Add garlic and cook 1 min.
  6. Add water, salt, and lime zest and bring to boil, then reduce to simmer.
  7. Cook covered for ~15 mins on low heat.
  8. Remove from heat and let sit for 10 mins to finish.
  9. Fluff with a fork.
  10. Stir in lime juice and cilantro
  11. Serve.
