Hummus is a healthy Middle Eastern dish made from pureed chickpeas (Garbanzo beans). It can be use as an appetizer, dip, spread, or an entree side. It’s easy to make hummus but is best if you have a food processor.
Ingredients
- 16 oz Canned Chickpeas – also called garbanzo beans
- 4 oz Tahini paste
- 2 oz Olive
- 2 Garlic cloves – or more
- 1 Lemon – juiced
- 1 TBL ground cumin or paprika (or both, what the hell)
- Salt and pepper to taste
- Chopped parsley to garnish
Process
- Mise en Place: Measure and prepare your ingredients prior to starting.
- Open chickpea can a drain, but retain liquid. Some like to pinch the skin off the peas but I seldom do because I like the added fiber and minerals.
- Put peas, tahini, cumin, oil, garlic, and lemon juice in a food processor, sprinkle with salt and pepper and process.
- Add chickpea liquid or water as needed to make a smooth but thick paste/puree.
- Season to taste with additional salt, pepper, and/or lemon juice
- Transfer to serving dish and sprinkle with cumin or paprika and some parsley.
Will last up to a week in a sealed container in the fridge.
