Hamburger Casserole

Dutch oven dish with potatoes and diced tomatoes. A quick and easy alternative to Taco Tuesday, or when the guys are coming over for poker and you’re out of ideas.

Ingredients

  • 32 oz Hamburger (2 lbs)
  • 64 oz Potatoes (4 lbs) – peeled and cut into 0.25″ slices
  • 28 oz can Diced tomatoes – undrained
  • 8 oz Beef stock (or 1 cup water and 1 tsp beef bouillon)
  • 1 Onion – sliced or diced
  • 2 Garlic cloves – minced
  • 1 tsp Kosher salt
  • 0.5 tsp black pepper
  • 2 TBL fresh parsley – chopped (Optional)

Process

  1. Mise en Place: Measure and prepare your ingredients prior to starting.
  2. Preheat oven to 250 F (~175 C).
  3. In Dutch over, layer half the meat, potatoes and onions.
    • Sprinkle half the salt, pepper, and garlic
    • Repeat layering
  4. Top with tomatoes (and tomatoes juice)
  5. Cover and cook ~50 mins.
  6. Garnish with parsley
