Dutch oven dish with potatoes and diced tomatoes. A quick and easy alternative to Taco Tuesday, or when the guys are coming over for poker and you’re out of ideas.
Ingredients
- 32 oz Hamburger (2 lbs)
- 64 oz Potatoes (4 lbs) – peeled and cut into 0.25″ cubes
- 28 oz can Diced tomatoes – undrained
- 8 oz Beef stock (or 1 cup water and 1 tsp beef bouillon)
- 1 Onion – sliced or diced
- 2 Garlic cloves – minced
- 6 TBL Olive oil
- 1 TBL Cajun spice
- 1 TBL Italian herb seasoning
- 2 tsp Kosher salt – divided
- 1 tsp garlic powder
- 1 tsp black pepper – divided
- 2 TBL fresh parsley – chopped (Optional)
Process
- Mise en Place: Measure and prepare your ingredients prior to starting.
- Preheat oven to 400 F.
- In a plastic bag, add potatoes, 4 TBL olive oil, Cajun spice, Italian herbs, garlic powder, 1 tsp salt and 0.5 tsp pepper. Shake to coat the potatoes
- Place potatoes in lined tray on a rack and back until golden brown, ~40 mins.
- Meanwhile, cook and drain the hamburger in skillet.
- Add 2 TBL olive oil and let heat. Add onions and cook until translucent, ~5 mins.
- One minute before onions are done, add the minced garlic.
- Lower oven temp to 250 F (~175 C).
- In Dutch oven, layer half the meat, potatoes and onions.
- Sprinkle with salt and pepper
- Repeat layering
- Top with beef stock and tomatoes (and tomatoes juice). Try to cover the entire surface area.
- Cover and cook ~50 mins.
- Garnish with parsley
