Crispy Baked Potatoes

If you’re like me, you like the skin on your baked potatoes to be a bit crispy while the inside remains moist but pipping hot. Here is a recipe that gets you to the potato promised land.

Ingredients

  • Russet potatoes – they are best for baking.

Process

  1. Prep the potatoes by soaking in water and washing clean. Allow to dry.
  2. Preheat oven to 400 F (205 C).
  3. Cut a “+” along the top of each potato 1/4″ deep.
  4. Brush entire potato with olive oil.
  5. Generously salt and pepper the skin.
  6. Place potatoes on a sheet or in a baking pan.
  7. Bake for 2 hours.
  8. Turn oven off and remove potatoes.
  9. Press each potato open a tad more.
  10. Serve or keep warm in oven as it cools until ready to serve.
