Citrus Chicken – Cuban Style

This chicken dish is bursting with flavors and because you make it in a slow cooker is easy and does not create that much of a mess in your kitchen. And if you are new to cooking, you know already how hard it is to time all your dishes so that they all finish at the same time. Because this is a slow cooked cuisine, you can not only time when it will be ready, you can also delay that time if your sides are not done yet. This dish is sometimes called Mojo Chicken.

Ingredients

  • 2 lbs Chicken breasts – boneless and skinless
  • 4 oz Orange juice – fresh squeezed, ~1 orange
  • 2 oz. Lime juice – fresh squeezed, ~2 limes
  • 2 oz Lemon juice – fresh squeezed, ~1 lemon
  • 2 TBL White vinegar
  • 2 TBL Olive oil
  • 5 Garlic cloves – minced
  • 1 tsp Cumin – ground
  • 0.5 tsp red pepper flakes
  • 0.5 tsp Coriander – ground
  • 0.5 tsp salt
  • 0.25 tsp Black pepper – ground
  • 2 tsp cornstarch
  • 2 TBL water

Process

  1. Mise en Place – measure and prepare your ingredients prior to starting.
  2. Combine fruit juices, vinegar, olive oil, garlic, cumin, pepper flakes, coriander, salt, and pepper in a blender or food processor.
    1. Pulse several times until mixture is well blended and smooth.
  3. Slow Cook Chicken
    1. Place chicken breasts in the bottom of a slow cooker on high setting for 2.5 hours.
    2. Cover meat with juice mixture and place lid on slow cooker.
    3. Cook for ~2.5 hours. An instant-read thermometer should read at least 165 degrees F (74 degrees C).
  4. Chose how to plate Chicken
    1. As whole or cut breast – leave in slow cooker to keep warm while you make the sauce.
    2. As shredded meat: Remove chicken and let cool for 5 mins. Shred using two forks to pull apart.
      1. Add some slow cooker juice if too dry.
  5. Make Sauce
    1. Strain liquid from slow cooker into a 1-quart saucepan.
    2. Bring to a boil over med-high heat and continue to boil until the liquid is reduced to 1 cup (~10 mins).
    3. Combine cornstarch and water in a small bowl and stir until there are no lumps.
    4. Add cornstarch mixture to the saucepan, stirring continuously.
    5. Boil ~2 mins, stirring continuously.
    6. Remove from heat when the sauce is thickens and adjust seasoning to taste.
  6. Serve sauce over chicken
