Broiled Haddock with Lime-Cilantro Butter

Who said Lent has to be boring, it wasn’t the fine folks in the fish industry trying to make you healthy. You can do what I usually do and substitute Walleye for haddock, but that’s mostly because I don’t live by the sea.

Ingredients

  • 4 – 6 oz Haddock fillets
  • 3 TBL Butter – melted
  • 3 TBL Cilantro leaves – finely chopped
  • 1 TBL Lime juice
  • 1 tsp Lime zests – grated

Process

  1. Mise en Place: measure and prepare your ingredients prior to starting.
  2. Make the glaze
    • Melt the butter on low heat
    • Pour butter into dish and add the lime juice, zest, and cilantro.
  3. Place fish on greased broiler pan 4-5 inches from flame.
  4. Broil for 5-6 mins or until fish easily flakes with fork.
  5. Generously brush the glaze over the fish.
  6. To plate, place fish on plate and drizzle remaining glaze around its base. Add the remaining sides.

Note 1: I like to serve this with air fried potato wedges for the starch and a fresh green vegetable, like grilled or steamed broccoli. My backup vegetable is a broiled Brussels sprouts.

Note 2: For you outdoorsmen, the recipe stays the same if substituting walleye or perch. The walleye may cook faster and the perch longer but it depends on your broiler
