Braised Chicken with Pearl Onions

This is a step in the gourmet side of chicken cuisine, but you deserve it.

Ingredients

  • 8 Boneless Skinless Chicken Thighs – ~2 lbs
  • 14 oz of Frozen Pearl Onions – thawed
  • 1 – 10.75 can of Cream of Chicken soup
  • 2 oz Dry White Wine
  • 2 tsp Parsley Leaves – chopped
  • 1 tsp dried Tarragon – 1 TBL fresh
  • 0.25 tsp dried Rosemary powder
  • Serve with rice or pasta

Process

  1. Mise en Place: Measure and prepare your ingredients prior to starting.
  2. Place chicken in slow cooker on High.
  3. Combine wine, soup, and seasonings and pour over chicken.
  4. Cook 8 hrs until tender.
  5. Remove chicken and skim fat from juice
  6. Serve meat over rice or pasta with juice on top.
  7. Sprinkle with parsley.

Note 1: If juice is not as thick as you would like, make a roux and use the juice as the liquid.

Note 2: if serving over pasta, add grated Parmesan as a garnish.
