Au Jus Sauce

A quick an simple au jus sauce you can make from the drippings of a beef entree.

Ingredients

  • 2 oz Drippings from a roasted or broiled beef entree
  • 16 oz Beef broth
  • 1.5 TBL Flour

Process

  1. Mise en Place: Measure and prepare your ingredients prior to starting.
  2. After preparing our beef entree retain the drippings.
  3. If you cooked the beef in a skillet use that to make the au jus, otherwise, pour drippings into a skillet.
  4. Place skillet over Med-High heat.
  5. Whisk in flour to make a roux and cook ~3 mins. or until slightly toasted.
  6. Pour in broth in four equal stages, making sure to work out lumps in each stage.
  7. Bring sauce to a boil then reduce heat to simmer.
  8. Salt and pepper to taste.
  9. To serve, either
    1. Slice your beef entree and spoon sauce over the top.
    2. Put the au jus in a sauce cup and dip the entree into it.
