A quick an simple au jus sauce you can make from the drippings of a beef entree.
Ingredients
- 2 oz Drippings from a roasted or broiled beef entree
- 16 oz Beef broth
- 1.5 TBL Flour
Process
- Mise en Place: Measure and prepare your ingredients prior to starting.
- After preparing our beef entree retain the drippings.
- If you cooked the beef in a skillet use that to make the au jus, otherwise, pour drippings into a skillet.
- Place skillet over Med-High heat.
- Whisk in flour to make a roux and cook ~3 mins. or until slightly toasted.
- Pour in broth in four equal stages, making sure to work out lumps in each stage.
- Bring sauce to a boil then reduce heat to simmer.
- Salt and pepper to taste.
- To serve, either
- Slice your beef entree and spoon sauce over the top.
- Put the au jus in a sauce cup and dip the entree into it.
