A great side with almost any meal is a Caesar salad and while there are many variations on this classic Caesar salad dressing, sometimes you want to jazz things up with a creaming version. As with most Caesar dressings, you will want (need) to add Anchovies but if that’s too far a leap, you can substitute capers.
Ingredients
- 2 Anchovies – can substitute 2 TBL capers
- 2 Garlic cloves – smashed
- 2 oz Half-and-half
- 1 cup Mayonnaise
- ⅓ cup Parmesan cheese – grated
- 2 TBL Lemon juice
- 1 TBL Dijon mustard
- 2 tsp Worcestershire sauce
Process
- Mise en Place – Measure and prepare your ingredients prior to starting.
- Place Anchovies and garlic cloves in a food processor and pulse until it’s a paste.
- Add rest of the ingredients.
- Pulse until dressing is creamy and smooth.
- Refrigerate for 1 hour or more before serving.
