Creamy Caesar Salad Dressing

A great side with almost any meal is a Caesar salad and while there are many variations on this classic Caesar salad dressing, sometimes you want to jazz things up with a creaming version. As with most Caesar dressings, you will want (need) to add Anchovies but if that’s too far a leap, you can substitute capers.

Ingredients

  • 2 Anchovies – can substitute 2 TBL capers
  • 2 Garlic cloves – smashed
  • 2 oz Half-and-half
  • 1 cup Mayonnaise
  • ⅓ cup Parmesan cheese – grated
  • 2 TBL Lemon juice
  • 1 TBL Dijon mustard
  • 2 tsp Worcestershire sauce

Process

  1. Mise en Place – Measure and prepare your ingredients prior to starting.
  2. Place Anchovies and garlic cloves in a food processor and pulse until it’s a paste.
  3. Add rest of the ingredients.
  4. Pulse until dressing is creamy and smooth.
  5. Refrigerate for 1 hour or more before serving.
