If you’re like me, you like the skin on your baked potatoes to be a bit crispy while the inside remains moist but pipping hot. Here is a recipe that gets you to the potato promised land.
Ingredients
- Russet potatoes – they are best for baking.
Process
- Prep the potatoes by soaking in water and washing clean. Allow to dry.
- Preheat oven to 400 F (205 C).
- Cut a “+” along the top of each potato 1/4″ deep.
- Brush entire potato with olive oil.
- Generously salt and pepper the skin.
- Place potatoes on a sheet or in a baking pan.
- Bake for 2 hours.
- Turn oven off and remove potatoes.
- Press each potato open a tad more.
- Serve or keep warm in oven as it cools until ready to serve.
