This recipe builds on a bowl of rice using avocado, cucumbers, and roasted spicy salmon bites. Of course you can modify the ingredients but the recipe for the salmon bites is useful.
Ingredients
- 1 lb Salmon – skinless
- 1 cup Rice
- 1 Avocado – sliced
- 1 Cucumber – sliced
- 1 TBL Olive oil
- 2 TBL Avocado oil
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Smoked paprika
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.25 tsp Cayenne pepper – optional
- Parsley or Cilantro – optional garnish
- Sesame seeds – optional garnish
- Green onion – optional garnish
- Sushi ginger – optional
- Soy sauce – optional
- Hard boiled egg – optional
Sauce
- 0.5 cup Mayonnaise
- 0.25 cup Gochunjang or chili sauce
- 1 TBL Honey
- 1 TBL Lime juice – freshly squeezed
- 1 TBL Sriracha sauce – optional
Process
- Mise en Place – measure and prepare your ingredients prior to starting.
- Make the sauce and let rest in the fridge.
- Combine garlic powder, onion powder, paprika, salt, pepper, and optional cayenne pepper in a bowl.
- Cut salmon in cubes ~1 inch.
- Pat salmon dry then place in mixing bag with 1 TBL olive oil and the spice mix. Shake to coat salmon.
- Cook rice – use your favorite rice recipe.
- Heat skillet on med, once hot add avocado oil and let get hot.
- Gently add salmon bites and cook tossing occasionally to sear all sides.
- Plating: put half the rice in a bowl, add the remaining ingredients on top along with the salmon. Garnish as desired.
