A quick soup from scratch that is healthy and easy to make. It has a large ingredient list, which is how you know it’s good. This recipe is Keto friendly it you omit the beans.
Ingredients
- 1/2 Head of cabbage – chopped
- 32 oz Chicken broth (4 cups)
- 16 oz Water (2 cups)
- 15 oz Can of fire-roasted tomatoes – chopped
- 15 oz Can of white beans – drained
- 1 Onion – diced
- 2 Carrots – chopped
- 2 Celery stalks – minced
- 2 Garlic cloves – minced
- 2 TBL Olive Oil
- 1 tsp Thyme leaves – dried
- 0.5 tsp Chili powder
- Kosher salt and pepper to taste
Process
- Mise en Place – measure and prepare your ingredients prior to starting
- Heat cast iron Dutch oven at Med. Once hot, add oil and let warm.
- Add onion, carrots, and celery. Season with salt, pepper, and chili. Cook ~5 mins or until onions are translucent.
- Stir in garlic, thyme leaves, and beans. Cook 1 min.
- Add broth and water and bring to boil, then reduce heat to a simmer.
- Stir in cabbage and tomatoes and simmer ~6 mins.
- Season to taste.
