If you like to eat a lot of salads, as I do, you sometimes need to change things up a bit. Here’s a nice salad that doubles as a Lent alternative and can either be a starter or entree.
Ingredients
- 12 oz Albacore white tuna – drained and flaked
- 6 oz Mayonnaise
- 4 Tomatoes – cut into wedges
- 0.5 cup Sweet onion – diced
- 1 Iceberg Lettuce leaf or 4 Romano lettuce leaves
- 1 Celery rib – chopped
- 1 tsp parsley – chopped
- 0.75 tsp Black pepper
Process
- Mise en Place: Measure and prepare your ingredients prior to starting.
- Combine all the ingredients, except the tomatoes.
- For 1 plate:
- Place iceberg lettuce leaf in center and arrange tomato wedges around that.
- Garnish with Parsley.
- For 4 plate appetizer:
- Place Romano lettuce leaf on a plate with 1/4th the salad mix scooped on top.
- Arrange 1/4th the tomatoes around the scoop.
- Garnish with Parsley.
