Yes, that’s right boys and girls, here is a recipe for those fantastic honey rolls they serve at the Texas Roadhouse restaurant while you’re waiting for their world-famous bowl of chili. These don’t take long to make but are best served warm, so you want to time them with any meal you’re preparing.
Ingredients
- 480 g Flour (4 cups)
- 288 g Milk (10 oz)
- 75 g Honey (2 oz)
- 56 g Butter (4 TBL) – melted and divided
- 10g dry Yeast (2.25 tps)
- 7.5 g Kosher salt (1 tsp)
- 1 Egg
Process
- Mise en Place: Measure and prepare your ingredients prior to starting.
- Scald the milk, i.e., bring to a boil.
- Let rest until it returns to 90 F.
- Pitch yeast: mix milk, honey, and yeast and let it sit for 10 mins.
- Mix 3TBL of melted butter and egg to yeast mix, integrate well.
- In stand mixer, add flour and salt.
- Add yeast mix and stir (speed 1) for 4 mins.
- Knead dough for 4 mins. at speed 4.
- First Proof: transfer dough to bowl and cover with film for 1 hr.
- Roll dough on flour dusted counter to 1/2″ thick and fold once.
- Cut into 24 squares and place on sheet with at least 1/2″ space between each roll.
- Second Proof: Let rise 40 mins.
- Preheat oven to 350 F (325 F fan).
- Bake ~10 mins
- Brush with remaining melted butter.
