Southwest Tatar Tot Casserole

For when you want to add a little spice to your life, or your hosting the US versus Mexico soccer game watch party and your buddy is bringing some pretty senoritas you want to impress. Most these ingredients you can get at the store but if not, improvise as best you can, it’s a casserole after all and there are no wrong combinations – just some more bizarre that others. I like to use roasted green chili but unless you live in New Mexico, you’ll probably have to rely on canned green chili, it’s a step down in quality but still good.

Process

  • 1 lb Ground Beef
  • 1 lb Ground Pork
  • 2 lbs Tatar Tots
  • 1 Onion – diced (optional)
  • 16 oz can of chili beans
  • 16 oz Sour Cream
  • 16 oz Mexican Cheese mix – your choice
  • 1 pck Chili Seasoning
  • 1 pck Enchilada sauce
  • 2 TBL Hot sauce – don’t use Tabasco
  • Green Chili – Hatch of course (optional)
  • Salt and pepper to taste

Ingredients

  1. Mise en Place – measure and prepare your ingredients prior to starting.
  2. Preheat oven to 375F
  3. Heat Dutch oven on Med-high and add beef, pork and onion and brown.
  4. Drain fat and mix in chili beans along with the chili seasoning spread evenly in bottom of pan.
  5. Spread half the meat evenly around bottom of pan and top with a layer of tots.
  6. Top that with remaining meat.
  7. In a separate bowl, mix 8 oz of sour cream with enchilada sauce, hot sauce, and green chili.
  8. Spread half the sour cream mix on top of the meat and reserve the rest for serving.
  9. Sprinkle cheese on top.
  10. Make an even layer of Tatar tots on top of the cheese.
  11. Bake 45-60 mins until tots are brown.
  12. Top with remaining half of sour cream mix just before serving.
