This creamy red sauce can be used many different ways, as a spread, on salads, to dress up meat and fish dishes, and to garnish vegetables. The quickest way to make this is using a jar of roasted red peppers, but if you really want to make from scratch, fire roast fresh peppers on the grill.
Ingredients
- 16 oz jar Roasted Red Peppers
- 4 oz Heavy cream
- 2 TBL Butter
- 4 Garlic cloves – peeled, smashed, and diced
- 0.5 tsp Basil – dried
- Salt and pepper to taste
Process
- Mise en Place – measure and prepare your ingredients prior to starting.
- Using mixer or food processor, puree the red peppers.
- Add juice from jar if dry.
- Heat a skillet on Med and melt butter. Saute garlic ~2 mins.
- Add pepper puree, and basil. Salt and pepper to taste.
- Simmer 10 mins.
- Remove from heat and add cream. Mix until smooth
- Salt to taste
- Serve hot or let cool, it depends how you intend to use it.
