There are as many ways to make couscous as there are Mediterranean chefs. Here is a quick and simple recipe for making basic couscous.
Ingredients
- 12 oz Chicken broth
- 8 oz dry Couscous
- 2 TBL Lemon juice
- 2 TBL Parsley – chopped
- 1 TBL Olive oil
- Salt and Pepper to taste
Process
- Mise en Place: Measure and prepare your ingredients before starting.
- Spread dry couscous in a small bowl or small tray that can hold liquid.
- Heat chicken broth to a boil.
- Pour broth over couscous and cover with film.
- Mix oil, lemon juice, and Parsley.
- Pour over couscous and use a fork to mix and fluff.
- Salt and Pepper to taste.
