Quick Couscous

There are as many ways to make couscous as there are Mediterranean chefs. Here is a quick and simple recipe for making basic couscous.

Ingredients

  • 12 oz Chicken broth
  • 8 oz dry Couscous
  • 2 TBL Lemon juice
  • 2 TBL Parsley – chopped
  • 1 TBL Olive oil
  • Salt and Pepper to taste

Process

  1. Mise en Place: Measure and prepare your ingredients before starting.
  2. Spread dry couscous in a small bowl or small tray that can hold liquid.
  3. Heat chicken broth to a boil.
  4. Pour broth over couscous and cover with film.
  5. Mix oil, lemon juice, and Parsley.
  6. Pour over couscous and use a fork to mix and fluff.
  7. Salt and Pepper to taste.
