Mirepoix is a French recipe base made from diced vegetables that are cooked slowly in a fat (I use olive oil) to sweeten and deepen the flavors of your cuisine. The mix is cooked over very low heat, as the intention is to intensify the vegetables’ flavor — not to caramelize them. The general ratio of ingredients is 2-1-1 or onion-carrot-celery. You can use additional items depending on the color and character you want you Mirepoix to have.
Ingredients
- 8 oz Onion – diced
- 4 oz Carrot – diced
- 4 oz Celery – diced
- 2 TBL Olive oil
- Optional or substituted ingredients
- 4 oz Bell pepper -diced
- 4 oz Green Chili – peeled and diced
- 4 oz Pablano pepper – diced
Process
- Mise en Place: Measure and prepare your ingredients prior to starting
- Warm skillet over low heat.
- Add olive oil and let warm.
- Add ingredients and slowly saute.
- Place cook vegetables on paper towels to absorb the oil.
- Add to your cuisine.
