Marzipan

If you bake much, you probably are familiar with marzipan, a moist almond dough used in cookies, cakes, and pastries. While many bakers buy marzipan from the store, why use something old and stuffed full of preservatives, when making fresh marzipan is quick and simple – and much cheaper than buying it already made.

Ingredients

  • 103 g Almond flour (3 5/8 oz)
  • 145 g Powder sugar (5 2/5 oz)
  • 1 TBL Light corn syrup
  • 0.25 tsp Almond extract
  • Cold water

Process

  1. Mise en Place: Measure and prepare your ingredients prior to starting.
  2. Sift flour and sugar together.
  3. Mix corn syrup and extract together, then add to the flour-sugar mixture.
  4. Add water slowly to the mixture, 0.5 tsp at a time, until the mixture has a consistency like bread dough.
  5. Shape into a log and refrigerate at least one hour.
  6. When ready, use the marzipan in your baking recipe as called for.
