Grilled Zucchini with Oven Option

Zucchini is one of those things you can do just about anything with, from making noodles to jazzing up a pasta dish, but by itself and grilled it’s the perfect side to serve with grilled steak or salmon. The important part about grilling zucchini though, is the prep work you do prior to the actual grilling so pay attention.

Ingredients

  • 4 Zucchinis
  • 2 TBL Olive oil
  • Salt to taste

Process

  1. Mise en Place – Measure and prepare your ingredients prior to starting.
  2. Prep Zucchini
    • Slice each zucchini in half length-wise
    • Score the inner flesh diagonally in both directions along length creating a diamond pattern.
    • Sprinkle salt on each half-section and let rest for 10 mins to draw out moisture.
    • Place flesh side down on paper towel to soak up moisture.
  3. Heat skillet on Med-High. Once warm, add olive oil and let warm.
  4. Place zucchini halves, flesh side down in skillet and cook ~ 5 mins
  5. Place on grill flesh side up and grill ~5 mins.
  6. Rotate to flesh side down and grill ~5 mins.
  7. Repeat steps 5 and 6 until center of zucchini is tender.

Oven Option: If grilling is not your deal, make the zucchini in the oven

  1. Preheat oven to 450 F (230 C).
  2. After step 4 above, transfer to baking pan and bake for 30 mins in oven until zucchini is tender
