Salmon is probably the most popular fish in the world, so no wonder you can find a fun and interesting way of preparing salmon in most cultures. Here is a recipe for grilled salmon with an Asian barbeque glaze that has a great taste and plate appearance.
Ingredients
- 1 lb Salmon fillet – cut into four fillets – skin on
- 0.25 cup Green onions – sliced thin
- 1 TBL Olive oil
- Sesame seeds
- Glaze
- 4 TBL Hoisin Sauce
- 2 TBL Rice Vinegar
- 2 TBL Soy Sauce
- 2 TBL Nirin*
- 1 TBL fresh Ginger – minced
- 0.5 tsp Garlic chili paste
- 0.5 tsp Garlic powder
- 0.5 Lime zest + the juice from the half lime
Process
- Mise en Place – Measure and prepare your ingredients prior to starting.
- Whisk the glaze ingredients together and let it rest at least 30 mins.
- Preheat grill to high heat.
- Brush both sides of salmon fillets with olive oil.
- Place fillets on grill with skin side down and cook ~5 mins.
- Flip over and cook ~2 mins or to 140 F internal temp.
- Top fillets with glaze and garnish with onions and sesame seeds before serving,
Note: You can heat the glaze a little, but not too much or it will be runny and not stick to the salmon. You can also glaze the salmon and put in the broiler for 1 min to heat the glaze and let it work into the fillets (then do step 7).
* Nirin is a Japanese sweet rice wine but if you don’t have any handy, substitute 2 TBL of dry white wine with 1 tsp of sugar.
