Garlic Aioli

This rich and garlic aioli is great on fried potatoes or in fish tacos . . . or about anything.

Ingredients

  • 6 oz Olive oil – Pure
  • 2 oz Olive oil – extra virgin
  • 3 Garlic cloves – peeled
  • 1 Egg yolk at room temperature
  • 0.5 Lemon – juice
  • Fresh ground black pepper to taste
  • Large pinch of Kosher salt – or to taste

Process

  1. Mise en Place: Measure and prepare your ingredients prior to starting.
  2. Place garlic, salt in food processor and pulse for ~2 seconds.
  3. Add egg yolk and lemon juice and pulse until blended.
  4. Turn food processor on and add the pure olive oil in a thin stream.
  5. Add the extra virgin olive oil in a thin stream.
  6. If solution is too thick add a small amount of water.
  7. Add pepper to taste – and more salt if desired.

Keep refrigerated after making. Will last several days but the garlic taste will diminish over time.
