An Italian classic breakfast dish that feeds a lot of people at once, which is a good thing when you find yourself with big group that needs their breakfast all together all at once.
Ingredients
- 12 Eggs – mixed
- 6 Bacon strips sliced into ribbons or Pancetta sliced and diced
- 1 TBL Olive oil
- 1 Sweet Red pepper (can use bell pepper) – diced
- 3 Green chilis – roasted, can use a small can
- 1.5 cups Potatoes – cooked and cubed
- 2 oz Feta cheese
- Salt and pepper to taste
Process
- Mise en Place: Measure and prepare your ingredients prior to starting.
- Place bacon and olive oil in a large skillet and cook.
- Add red pepper once the bacon starts to cook.
- Cook until bacon is done and peppers is soft.
- Drain grease and add the green chili.
- Add potatoes and stir until warm (~2 mins). Salt and pepper to taste
- Pour in eggs and slowly stir to create large soft curds.
- Add cheese and gently stir.
- Turn on oven broiler and place on rack ~6″ from heat. Cook until the Frittata cheese melts. This will only take a few minutes.
