If you ever go to Paris, make sure that at least once you enjoy a cup of hot chocolate. It will be every bit as rich and decadent as you’d expect. My preferred place is Charles Chocolatier, 15 Rue Montorgueil, but good places are everywhere. If you want to capture the memory of your trip to Paris, here’s a recipe to help.
Ingredients
- 16 oz Whole milk
- 8 oz heavy whipping cream
- 8 ounces bittersweet chocolate – finely chopped, don’t cheap out
- 2 tsp sugar – optional
- 2 tsp powdered sugar
- 1 tsp Vanilla extract
Process
- Mise en Place – measure and prepare your ingredients prior to starting.
- Place a stainless steel mixing bowl and SS whisk in the freezer for ~30 minutes.
- If using your stand mixer, freeze that along with it’s whisk.
- Whisk whipping cream, sugar and vanilla extract until stiff peaks form. Use highest speed (#10).
- In a SS sauce pan, whisk whole milk and powdered sugar over Med heat until small bubbles appear.
- Don’t allow the milk to boil.
- Remove from heat and gently whisk in the chopped chocolate until melted.
- Serve warm in demitasse cups with the whipped cream on top.
Note: For an even more luxurious French style hot chocolate, add a just a pinch of fleur de sel.
