Dry Italian Rub or Salad Mix

This recipe can be used to make either a salad dressing or the spice mix for Italian roast beef sandwiches. This can also be used a rub for roasted chicken or a beef roast. I provide both the fresh and dry herb recipe. Depending on your application, one version may be better than the other. For example, if making Italian roast beef sandwiches, I’d go with fresh herbs, but if making a chicken rub, I’d use dry herbs. Keep in mind when using fresh herbs that the stems have more powerful taste and aroma than the leaves.

Ingredients

  • Dry rub
    • 1 TBL dried Garlic Powder or 3 TBL fresh garlic – minced
    • 2 TBL dried Oregano or 6 TBL fresh oregano – chopped
    • 1 TBL dried Parsley or 3 TBL fresh Parsley – chopped
    • 1 tsp dried Basil or 1 TBL fresh Basil – chopped
    • 0.25 tsp dried Thyme or 0.75 tsp fresh Thyme – chopped
    • 1 TBL dried Onion Powder
    • 0.5 TBL Kosher Salt
    • 1 tsp Black Pepper
  • Salad Dressing
    • 2 oz White vinegar
    • 6 oz Extra virgin olive oil
    • 2 TBL water

Process

  1. Mise en Place: Measure and prepare your ingredients prior to starting.
  2. Make the Rub
    • Mix all the dry ingredients together.
  3. Make salad dressing
    • Mix dressing ingredients with 2 TBL of the dry rub
    • Mix well and serve
