Creamy Garlic Salmon Sauce

This sauce is intended to go with grilled salmon, but it works well for other foods, like roasted Asparagus or French Fries.

Ingredients

  • 8 oz Heavy cream
  • 4 oz Dry white wine
  • 4 oz Chicken stock
  • 0.5 cup Parmesan cheese – grated
  • 2 Garlic cloves – minced
  • 2 tsp Olive oil
  • 2 tsp fresh Tarragon leaves – 2/3rds dry
  • 2 tsp Chervil (parsley) – chopped
  • 2 tsp Parsely – chopped

Process

  1. Mise en Place: Measure and prepare ingredients prior to starting.
  2. Heat saucepan (or use saucepan used to cook salmon). Add oil and let get hot.
  3. Sautee garlic for 1 min.
  4. Add wine and turn heat to high, and simmer. While stirring constantly, cook 1 min. until mostly evaporated.
  5. Add cream and stock, and simmer on Med. ~3.
  6. Add Parmesan and herbs and stir until thickened.
  7. Salt and pepper to taste.
