This sauce is intended to go with grilled salmon, but it works well for other foods, like roasted Asparagus or French Fries.
Ingredients
- 8 oz Heavy cream
- 4 oz Dry white wine
- 4 oz Chicken stock
- 0.5 cup Parmesan cheese – grated
- 2 Garlic cloves – minced
- 2 tsp Olive oil
- 2 tsp fresh Tarragon leaves – 2/3rds dry
- 2 tsp Chervil (parsley) – chopped
- 2 tsp Parsely – chopped
Process
- Mise en Place: Measure and prepare ingredients prior to starting.
- Heat saucepan (or use saucepan used to cook salmon). Add oil and let get hot.
- Sautee garlic for 1 min.
- Add wine and turn heat to high, and simmer. While stirring constantly, cook 1 min. until mostly evaporated.
- Add cream and stock, and simmer on Med. ~3.
- Add Parmesan and herbs and stir until thickened.
- Salt and pepper to taste.
