Coleslaw

Home cooks are passionate about their coleslaw and will argue about the “this” and “that” of various ingredients for what should be a simple recipe. For me, the most important thing is adding celery seeds. Also be careful to remove the core from the cabbage before shredding, or you will get a much hotter and bitter outcome.

Ingredients

  • 3 cups Green cabbage – finely shredded
  • 2 cups Purple cabbage – finely shredded
  • 1 cup Carrots – finely grated
  • 4 oz Mayonnaise
  • 1 TBL White vinegar
  • 0.5 TBL Cider vinegar
  • 2 tsp Sugar
  • 0.5 tsp Celery seeds
  • Salt and pepper to taste

Process

  1. Mise en Place – Measure and prepare your ingredients prior to starting.
  2. Combine all the dressing ingredients in a large bowl and mix well.
  3. Add in the cabbage and carrots.
  4. Refrigerate at least an hour prior to serving to let ingredients integrate.
