A quick soup for a hot day that’s ready in ten minutes and made from fresh ingredients
Ingredients
- 1/2 cucumber – seeds removed
- 1 medium avocado – spooned out
- 1 shallot – sliced
- 2 TBL plain yogurt
- 2 TBL fresh mint
- 4 tsp fresh lime juice
- 1 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/4 tsp ground cumin
- Garnish with one radish and 1 sprig of fresh mint
Process
- Put all the soup ingredients into a food processor and blend until smooth.
- Chill for at least one hour
- Serve
