Cilantro-Chili Chicken Marinade

This is a great marinade for chicken. I use it to Sous Vide chicken or to cook on a grill. One of my favorite things is to mix the marinade and place in Sous Vide bag with chicken. Once the chicken is done, I freeze it in the vacuum sealed bag until I go camping, then I finish the chicken on a wood fire grill. I also take the Sous Vide chicken and finish on my gas grill at home to get a nice crispy skin finish. This recipe is for 1.5 lbs of chicken.

Ingredients

  • 0.25 cup Cilantro – chopped
  • 2 TBL Olive oil
  • 2 TBL Lime Juice
  • 1 TBL Lime zest
  • 2 Garlic cloves – minced
  • 1 tsp Red chili powder
  • 1 tsp Cumin
  • 1 tsp Kosher salt
  • 0.5 tsp Black pepper

Process

  1. Mise en Place – Measure and prepare your ingredients prior to starting.
  2. Mix marinade ingredients together.
  3. For baking or grilling
    1. Put chicken in a bag or plastic container and toss with marinade coating chicken well.
    2. Put chicken in fridge a minimum of 2 hrs turning often – overnight is best.
  4. For Sous Vide
    • Put chicken in a Sous Vide bag with marinade and vacuum seal
    • Cook chicken until done (~ 4 hrs)
    • Can open bag and serve, or finish on grill
    • Can freeze vacuum bag for latter use ( great way to meal prep).
