This is a great marinade for chicken. I use it to Sous Vide chicken or to cook on a grill. One of my favorite things is to mix the marinade and place in Sous Vide bag with chicken. Once the chicken is done, I freeze it in the vacuum sealed bag until I go camping, then I finish the chicken on a wood fire grill. I also take the Sous Vide chicken and finish on my gas grill at home to get a nice crispy skin finish. This recipe is for 1.5 lbs of chicken.
Ingredients
- 0.25 cup Cilantro – chopped
- 2 TBL Olive oil
- 2 TBL Lime Juice
- 1 TBL Lime zest
- 2 Garlic cloves – minced
- 1 tsp Red chili powder
- 1 tsp Cumin
- 1 tsp Kosher salt
- 0.5 tsp Black pepper
Process
- Mise en Place – Measure and prepare your ingredients prior to starting.
- Mix marinade ingredients together.
- For baking or grilling
- Put chicken in a bag or plastic container and toss with marinade coating chicken well.
- Put chicken in fridge a minimum of 2 hrs turning often – overnight is best.
- For Sous Vide
- Put chicken in a Sous Vide bag with marinade and vacuum seal
- Cook chicken until done (~ 4 hrs)
- Can open bag and serve, or finish on grill
- Can freeze vacuum bag for latter use ( great way to meal prep).
