Okay, so you’ve made the perfect pasta dinner, say Cacio e pepe, or spinach linguine with pesto, but now you need an equally impressive side of garlic bread. Here is how I make my cheesy garlic bread, not only is it quick and easy, it is moist and tasty. While this is a bit off from what you may be used to, give it a try and see what you think.
Ingredients
- 1 French baguette (long loaf)
- 1/4 cup grated Parmesan cheese
- 4 cloves garlic – minced fine
- 1/4 cup olive oil
- 2 TBL mayonnaise
- 2 tsp dried oregano
- 1/4 tsp sage
- 1/2 tsp sea salt (fine grain)
- 1/4 tsp black pepper
Process
- Mise en Place – measure and prepare your ingredients prior to starting.
- Preheat oven to 400 deg. F
- Slice bread either in half length-way to create to long pieces you can slice before serving, or a bunch of 3/4″ thick slices cut at a diagonal down the length of the loaf if you want to build individual slices.
- Brush the top of each bread slice with olive oil, then spread on the mayo.
- Mix the garlic, oregano, sage, salt & pepper together, then sprinkle evenly on each slice.
- Top with Parmesan cheese.
- Bake until cheese just starts to brown.
- Allow to cool before serving to insure your guests don’t burn their mouths with melting hot cheese.
Note: if you want to cheat, you can substitute garlic salt for the fresh garlic and sea salt, but be careful, garlic salt is generally very salty.
