Breakfast Strata

Stratas are egg casseroles made with bread and this is a rich Italian style breakfast that takes about 90mins to make and serves 8. I like to make breakfast like this when I have a lot of guests staying with me because it is not only impressive, it’s done all at once and you don’t have a line of people holding plates while their bacon gets cold as you fry eggs.

Ingredients

  • 1 lb Italian sausage
  • 1 10 oz package of frozen Spinach – defrosted and drained
  • 10 eggs
  • 16 oz Whole milk (2 cups)
  • 4 cups Bread – cubed
  • 1 cup Baby Bella mushrooms – or another substitute
  • 1 cup Grape tomatoes – halved
  • 1.5 cups Fontiau cheese – or Gruyere or White cheddar
  • 0.25 cups Basil – torn, for garnish
  • 1 TBL Butter
  • Kosher salt and pepper to taste

Process

  1. Mise en Place – measure and prepare your ingredients before starting.
  2. Preheat oven to 350 F (175 C) and grease a 9″x13″ pan with butter.
  3. Cook sausage and drain, then let cool.
  4. I large bowl
    1. Whisk eggs and milk and season with salt and pepper.
    2. Fold bread cubes into egg mix.
    3. Add spinach, mushrooms, tomatoes and sausage.
  5. Pour into baking dish and top with cheese.
  6. Bake uncovered for ~55 mins until cheese is brown and liquid it absorbed.
  7. Let cool 10 mins before slicing.
  8. Garnish with basil.

Note: If you don’t have a half a loaf of sliced bread getting stale, buy the cheapest loaf the store sells and cube that. You will find that the bread will absorb most of the liquid.
