Stratas are egg casseroles made with bread and this is a rich Italian style breakfast that takes about 90mins to make and serves 8. I like to make breakfast like this when I have a lot of guests staying with me because it is not only impressive, it’s done all at once and you don’t have a line of people holding plates while their bacon gets cold as you fry eggs.
Ingredients
- 1 lb Italian sausage
- 1 10 oz package of frozen Spinach – defrosted and drained
- 10 eggs
- 16 oz Whole milk (2 cups)
- 4 cups Bread – cubed
- 1 cup Baby Bella mushrooms – or another substitute
- 1 cup Grape tomatoes – halved
- 1.5 cups Fontiau cheese – or Gruyere or White cheddar
- 0.25 cups Basil – torn, for garnish
- 1 TBL Butter
- Kosher salt and pepper to taste
Process
- Mise en Place – measure and prepare your ingredients before starting.
- Preheat oven to 350 F (175 C) and grease a 9″x13″ pan with butter.
- Cook sausage and drain, then let cool.
- I large bowl
- Whisk eggs and milk and season with salt and pepper.
- Fold bread cubes into egg mix.
- Add spinach, mushrooms, tomatoes and sausage.
- Pour into baking dish and top with cheese.
- Bake uncovered for ~55 mins until cheese is brown and liquid it absorbed.
- Let cool 10 mins before slicing.
- Garnish with basil.
Note: If you don’t have a half a loaf of sliced bread getting stale, buy the cheapest loaf the store sells and cube that. You will find that the bread will absorb most of the liquid.
