Next time you have bananas going bad, think pancakes instead of bread. This made from scratch recipe not only impresses the young’ns, but the old geezers who complain about everything as well, so it’s a win-win at the breakfast table.
Ingredients
- 3 Bananas – mashed
- 2 cups Flour
- 1/4 cup Sugar
- 12 oz Milk
- 1 Egg – beaten
- 2 TBL Vegetable oil
- 2 TBL Vinegar
- 2 tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Vanilla
- 1 tap Cinnamon
- 0.75 tsp Salt
- 0.25 tsp Ground Nutmeg
Process
- Mise en Place – Measure and prepare the ingredients prior to starting.
- Mix mashed bananas, milk, egg, oil, vinegar, and vanilla in a bowl.
- Combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt in another bowl.
- Add dry ingredients to the banana mix and combine well.
- Let rest for ~10 mins, bubbles will form as vinegar reacts to the baking soda.
- Heat griddle on Med, and adjust to make golden-brown pancakes.
- Ladell pancake batter into griddle and let cook until bubbles from on top ~2 mins.
- Flip pancake and cook an additional 2 mins.
- Pancakes are fully cooked when golden-brown.
- Serve with optional butter and syrup.
- Left over pancakes are great as a cold snack throughout the day.
Note: the nutmeg can overpower the other spices so you may need to experiment with more or less.
