Avocado Sauce

This is a great sauce for many things, like eggs or for dipping cauliflower. Once you taste it, you’ll know how best to use it in your cuisines.

Ingredients

  • 1 avocado – halved
  • 2 scallions – rough chopped
  • 1 Jalapeño – deseeded & rough chopped
  • 0.5 lime – juiced
  • 1 TBL Olive oil
  • 1 TBL grated parmesan
  • 0.25 cup parsely – rough chopped
  • 1/3 cup water
  • salt + pepper to taste

Process

  1. Mise en Place – measure and prepare your ingredients prior to starting.
  2. Put all ingredients in a food processor and blend until smooth.
  3. Adjust as needed.
  4. Will keep a day or two at best
