This recipe is intended for the grill, but you can also pan fry the pork chops or even oven bake them, it just won’t be as good . . . I’m just saying.
Ingredients
- 1.5 lbs Pork Chops – bone-in and thawed
- 4 Apples – cut in half and cored (to be grilled)
- Rub
- 2 tsp Brown sugar
- 2 tsp Chili powder
- 1 tsp Garlic powder
- 1 tsp Salt
- 0.5 tsp Pepper
- 1 TBL Olive oil
- Apple Cider Glaze
- 12 oz Apple cider
- 2 oz Maple Syrup – don’t use the sugar imitation
- 1 TBL Dijon mustard
- 0.5 tsp Crushed red pepper flakes (optional)
- 0.5 tsp Salt
Process
- Mise en Place: Measure and prepare your ingredients prior to starting.
- Put glaze ingredients in a sauce pan and simmer to reduce.
- Mix rub’s dry ingredients together, then add oil to make a paste.
- Fire up the grill to high.
- Pat pork chops dry with paper towels and rub both sides of meat with paste.
- Sear both sides of the Pork Chop on the grill (~6 mins per side).
- Remove from grill and let rest ~5 mins.
- Just before serving, add the glaze to your presentation side of the Pork Chop.
Note: When you place the Pork Chop on the grill position so the bone is at a 45 deg. angle from the grill grates, this makes nice presentation marks.
