This version of yellow rice is generally for Halal Cart, which suggests a Mediterranean influence, which you see from the ingredient list. I like to serve this rice with grilled fish or jerk pork, so experiment, that’s what the food journey is all about. Feeds 2-3 depending on who’s at dinner.
Ingredients
- 1.5 cups Basmati rice – or any long grain rice
- 24 oz Chicken broth – can use water or a combination
- 2 Tbs Butter
- 1 tsp Cumin
- 0.5 tsp Turmeric
- 0.5 tsp Kosher salt
Process
- Mise en Place – measure and prepare your ingredients prior to starting.
- Heat a pan on Med.
- Add butter and let melt.
- Mix cumin and turmeric into the butter and sauté for 1 min.
- Add rice and stir to coat with butter mixture. Sauté for 1-2 mins until starting to brown.
- Toss in salt.
- Pour in broth and bring to a boil.
- Lower heat and simmer covered for ~15 min (until broth is fully absorbed and rice is soft).
- Fluff with fork.
- Serve.
