Yellow Rice – Halal Cart Style

This version of yellow rice is generally for Halal Cart, which suggests a Mediterranean influence, which you see from the ingredient list. I like to serve this rice with grilled fish or jerk pork, so experiment, that’s what the food journey is all about. Feeds 2-3 depending on who’s at dinner.

Ingredients

  • 1.5 cups Basmati rice – or any long grain rice
  • 24 oz Chicken broth – can use water or a combination
  • 2 Tbs Butter
  • 1 tsp Cumin
  • 0.5 tsp Turmeric
  • 0.5 tsp Kosher salt

Process

  1. Mise en Place – measure and prepare your ingredients prior to starting.
  2. Heat a pan on Med.
  3. Add butter and let melt.
  4. Mix cumin and turmeric into the butter and sauté for 1 min.
  5. Add rice and stir to coat with butter mixture. Sauté for 1-2 mins until starting to brown.
  6. Toss in salt.
  7. Pour in broth and bring to a boil.
  8. Lower heat and simmer covered for ~15 min (until broth is fully absorbed and rice is soft).
  9. Fluff with fork.
  10. Serve.
